Chicken Tabaka
Chicken Tabaka is a beloved traditional dish of Georgian cuisine. Its original name is “Tsitsila Tapaka”, where Tapaka refers to a flat Georgian pan used for cooking. The chicken is marinated with garlic and spices, then pan-fried until golden and crispy.
 
															Ingredients:
- 1 chilled Alel Chicken Tabaka 
- Butter 
- 1 lemon 
- Black pepper – to taste 
- 4 garlic cloves 
- Salt – to taste 
- Natural spices “Khmelisuneli” – to taste 
Preparation:
 
							- Flatten the chicken by pounding it on both sides with a kitchen mallet. 
- For the marinade, squeeze lemon juice and mix with crushed garlic, salt, black pepper, and khmeli-suneli spices. 
- Rub the marinade over the entire chicken and let it rest for 1 hour. 
- Melt butter in a frying pan. Place the chicken skin-side down, cover with a heavy lid (or press down with a pot lid and a water-filled container on top). 
- Fry for 15–20 minutes, flip, and cook for another 15–20 minutes until golden brown and fully cooked.
